New features for our Austin based BBQ Joint. DRY Aged Brisket

We’ve had t2 of the Pro 520 in the smokehouse for 8 months now. Aging beef ribeyes and brisket in here has changed our yield—better bark, great moisture retention, and flavor that hits where it counts. The unit holds temp and humidity solid under load. Only gripe: the size means we had to rework shelving to fit whole ribs comfortably. But for beef, this thing is a workhorse.

The front panel on the locker should be set to 35 degrees and 70% humidity. There are defrost cycles, the temperature and humidity will always fluctuate. As long as temperature stays between 34-41 degrees and humidity stays between 60-80% there is a safe dry aging environment. Thank you kindly, Nadia
