A dry aging cabinet isn't a fridge that sits there — it's actively managing humidity, filtering the air, and running UV sanitation on every cycle. That only holds up if the parts doing that work are fresh. A tired filter or a spent UV bulb won't fail loudly. It just quietly lets the environment drift, and the first sign is usually the cut itself — inconsistent pellicle, off smells building up, humidity that won't hold where you set it.
Which filter fits your unit
Square Filter — current-generation Steak Locker units (G5 and recent G4): the models that recover humidity from the evaporator, no reservoir drawer to fill.
Rectangle Filter — legacy units built with the reservoir drawer humidity system. If your cabinet has a water drawer, this is your filter, not the Square.

When to replace
There's no universal countdown — it depends on how hard the cabinet is running and what you're aging. Watch for: humidity that used to hold steady now drifting off your setpoint; airflow that sounds or feels weaker than it did; any lingering odor after a cycle that UV should have handled; visible discoloration or buildup on the filter itself. Any one of those is your cabinet telling you it's time — the same way you'd read a cut rather than a calendar.
